Rec: Microwave Fettuccine With Alfredo Style Sauce

3/4 pound fettuccine (dried)


Sauce

1/4 cup all-purpose flour
2 tablespoons margarine or butter
2 cups low fat milk
1 cup grated cheddar cheese
2/3 cup leeks, chopped finely
1/3 teaspoon salt
1/8 teaspoon pepper

Garnish

4 tablespoons parsley, chopped




Cook the fettuccine according to the instruction on the
package. To make Alfredo Sauce, place the flour and
margarine or butter in a microwave safe bowl (4 liter
or 4 quart) and cover. Cook on HIGH (1200W) for
30 to 40 seconds. Take the bowl out and stir well with
a wire whisk. Gradually add 1/2 cup of milk at a time,
stirring constantly until you use all the milk. Cover with
a vented microwave lid and cook on HIGH (1200W) for
2 minutes. Take the bowl out and stir. Cook on HIGH
(1200W) for 2 more minutes. Add the leeks, cheddar
cheese, salt and pepper. Stir until the cheese melts.
Gently mix in the pasta until it is well coated with
Alfredo Sauce. Transfer to warm serving plates and
garnish with parsley.



Serves 4
Refrigerate remainder
Can be reheated in microwave
