Rec: Saucy Lemon Shrimp

1 1/2 lbs uncooked large shrimp, peeled, deveined, tails on
1/2 teaspoon black pepper
1/2 cup (1 stick) butter, thinly sliced
juice and zest of 2 lemons
1 tablespoon fresh chopped parsley


Put the shrimp in a single layer in a microwave baking
dish. Season with the pepper then top with the butter,
lemon zest and parsley. Pour the lemon juice into the
baking dish. Cook on MEDIUM HIGH for 3 1/2 minutes or
until the shrimp are pink and cooked through.

Serves 4 to 6
Refrigerate remainder
Can be reheated next day in microwave
Do not over heat or shrimp will become rubbery
