Rec: Chicken Livers Supreme

1/2 lb sliced fresh mushrooms
1 small onion, chopped
1/4 cup butter
1 lb chicken livers, halved
2 to 3 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon thyme

In a 2 1/2 quart casserole, combine mushrooms, onion and
butter. Cover and microwave on HIGH 4 to 5 minutes, stirring
once, until onion and mushrooms are tender. Toss livers with
flour, salt, pepper and thyme and stir in. Cover and cook on
HIGH 3 minutes and on MEDIUM 6 to 8 minutes, stirring twice,
until livers are tender. Best served over rice.

Serves 4
Refrigerate remainder
Can be reheated in microwave

Lovely, but liver with fava beans and a nice chianti is MY favorite.
