Rec: Elvis Presley's Grilled Peanut Butter And Banana Sandwich
2 slices of white bread
2 tablespoons of smooth peanut butter
1 small ripe banana mashed
2 tablespoons butter
Spread the peanut butter on one slice of bread and the
mashed banana on the other. Press the slices gently
together. Melt the butter (or to be truly Elvis-like,
melt bacon fat!), over low heat in a small frying pan.
Place the sandwich in the pan and fry until golden
brown on both sides. Eat it with a glass of buttermilk.
Please note: Elvis tended to eat 12-15 sandwiches a sitting! So belly up!

Rec: Microwaved Potatoes Lyonnaise
2 large potatoes, peeled and cubed
2 small onions, sliced
1 tablespoon and 1 teaspoon margarine
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon dried oregano
1/8 teaspoon black pepper
1/8 teaspoon paprika
In a 3 quart casserole dish, combine potatoes, onions,
margarine, garlic, salt, oregano, pepper and paprika.
Heat in microwave on HIGH until margarine melts,
about 1 minute; stir. Cook 10 minutes more, stirring
occasionally.
Serves 3 to 4
Refrigerate remainder
Can be reheated in microwave

In a microwave steamer, cook white rice with water
for 12 minutes on 100% power.-In a bowl, combine
the mayonnaise, onion, peppers, picanté sauce and
cheddar cheese. When rice has cooked for 12 minutes,
remove from microwave and add the mayonnaise
mixture. Return to the microwave for 8 minutes on
100% power. Serve with fajitas.
Serves 6 to 8

Wasabi Coating
4 teaspoons Wasabi powder
2 tablespoons tahini
2 tablespoons rice vinegar
2 teaspoons Dijon mustard
Soak the peas in water to cover overnight. Preheat the
oven to 200°. Drain the peas, then cook them according
to instructions on the package. Mix the olive oil with the
cooked peas until well coated. Oil a baking sheet and
spread the peas evenly across it. Place in the oven and
bake for 5 hours, until the peas appear dry and are crisp
when bitten into. Combine the Wasabi powder, tahini,
rice vinegar and mustard in a mixing bowl. Combine
the wasabi mixture with the hot peas making sure that
all the peas are evenly coated. Using a rubber spatula,
spread the peas on the baking sheet, separating as many
as you can. Increase the oven temperature to 250°.
Bake the peas for 10 to 15 minutes, until the coating is dry.

To Brush On Top
2 tablespoons butter, melted
¼ teaspoon dried parsley flakes
½ teaspoon garlic powder
pinch salt
Preheat your oven to 400 degrees. Combine Bisquick with
cold butter in a medium bowl using a pastry cutter or a
large fork. You don't want to mix too thoroughly. There
should be small chunks of butter in there that are about
the size of peas. Add Cheddar cheese, milk, and ¼ teaspoon
garlic. Mix by hand until combined, but don't over mix.
Drop approximately ¼-cup portions of the dough onto an
ungreased cookie sheet using an ice cream scoop. Bake for
15 to 17 minutes or until the tops of the biscuits begin to
turn light brown. When you take the biscuits out of the
oven, melt 2 tablespoons butter is a small bowl in your
microwave. Stir in ½ teaspoon garlic powder and the dried
parsley flakes. Use a brush to spread this garlic butter over
the tops of all the biscuits. Use up all of the butter. Makes
one dozen biscuits.
Serves 4 to 6

LOW(30%) and cook for 14 minutes. Remove from the
oven and let it sit for 5 minutes with the cover on. Fluff
rice lightly with a fork.
Makes 4 cups

They also sent me official literature stating that Oklahoma has enormous quantities of culture in the form of ballet, Oral Roberts, etc., and that the Official State Reptile -- I am not making this up -- is something called the 'Mountain Boomer.' So I apologize to Oklahoma, and as a token of my sincerity I'm willing to sell my state, Florida, to the Japanese, assuming nobody objects to the fact that Japan would suddenly become the most heavily armed nation on Earth." - Dave Barry
The Hard Truth From Orlando
You know what bothered me about that article on the four social workers facing criminal charges over the death of a child whose safety they were responsible for monitoring? That the two supervisors were written up as being big in their churches. It's been my very bad experience that the very religious, church-types turn a blind eye to behaviors that tell you something bad is happening because they believe that God made families, families need to be together, blah-blah-blah. It's the same kind of blind idiocy that lets them allow and even defend child molesters and killers in their own organizations, but insists that every pregnancy be carried to term while you punish the mother for getting pregnant.
The other thing that bothers me, is this social worker organization a contracted private organization or is it really a state organization, manned by state employees? The difference is, we have so many church or faith-based private organizations vying for government dollars -- promoted by former President G.W. Bush as being "more economical" than government-run agencies. So minimal standards are set and the money is paid with little government oversight. These private companies have their own agenda and it's not necessarily about protecting the children or families; it's about getting as many cases as they can so they can pull in the money and submit the paperwork that meets the minimum criteria.
We've had some truly hideous cases come through our court here. The eight-year-old who was removed from his insanely abusive mother and siblings, placed (per state-legislated criteria that you have to look for placement within a dysfunctional family rather than finding someone sane first) with another relative, who then promptly stuck the kid back with the mother he'd been removed from because the relative couldn't be bothered to find a babysitter while she worked. The 13-year-old abusive sibling strangled the eight-year-old over an old cupcake the kid ate because he was hungry. The 13-year-old killed his younger half-brother because the cupcake was his mom's "treat" to herself and she'd beat the 13-year-old if it was gone. Yep. Right here in Orlando. And the relative was NEVER charged. The 13-year-old was, but not the mom and not the relative who violated the protection order by putting the child back in harm's way.
And that's just one instance of the craziness. I'm still a strong proponent of the government handing out all available contraceptive means, providing free abortions and totally chopping out welfare payments after two years to non-working parents and repossessing any children for adoption by non-relatives if the parent can't get it together. When every child is planned, it will be a wanted and provided for child. We won't see children used as two-legged paychecks for freaks who breed and pass the kids around like a coupon for free government money. A box of condoms or a $300 to $500 abortion is a damned sight more economical to society and our government than 18 years of counseling, welfare, food stamps, subsidized housing, legal assistance, foster care, Medicaid or independent living expenses if the kids age out of foster care.
If our government leaders were serious about reducing crime, poverty, government spending, child abuse, they'd hand over the medical provisions and acknowledge that being a parent is either totally the individual's choice and therefore an individual's responsibility and will automatically result in criminal charges against parents who expose their offspring to abuse, or they'd say being a parent is not a choice and the government is picking up the tab for all the unwanted, unprovided for children the current paternalistic legislation promotes. Instead, we have these half-measures. On the one hand, access to contraceptives and abortion are being made inaccessible to the neediest people among us. But on the other hand, the government is handing out money hand-over-fist for children with little hope of ever being productive, contributing, taxpaying citizens.
I say, pick one. Either end the mindless production of children for a social work and prison industry, or admit and accept it's okay that the taxpayer foots the bill for religious-based irrational policies and pays for it with the blood of unplanned, unwelcome children.

The other thing that bothers me, is this social worker organization a contracted private organization or is it really a state organization, manned by state employees? The difference is, we have so many church or faith-based private organizations vying for government dollars -- promoted by former President G.W. Bush as being "more economical" than government-run agencies. So minimal standards are set and the money is paid with little government oversight. These private companies have their own agenda and it's not necessarily about protecting the children or families; it's about getting as many cases as they can so they can pull in the money and submit the paperwork that meets the minimum criteria.
We've had some truly hideous cases come through our court here. The eight-year-old who was removed from his insanely abusive mother and siblings, placed (per state-legislated criteria that you have to look for placement within a dysfunctional family rather than finding someone sane first) with another relative, who then promptly stuck the kid back with the mother he'd been removed from because the relative couldn't be bothered to find a babysitter while she worked. The 13-year-old abusive sibling strangled the eight-year-old over an old cupcake the kid ate because he was hungry. The 13-year-old killed his younger half-brother because the cupcake was his mom's "treat" to herself and she'd beat the 13-year-old if it was gone. Yep. Right here in Orlando. And the relative was NEVER charged. The 13-year-old was, but not the mom and not the relative who violated the protection order by putting the child back in harm's way.
And that's just one instance of the craziness. I'm still a strong proponent of the government handing out all available contraceptive means, providing free abortions and totally chopping out welfare payments after two years to non-working parents and repossessing any children for adoption by non-relatives if the parent can't get it together. When every child is planned, it will be a wanted and provided for child. We won't see children used as two-legged paychecks for freaks who breed and pass the kids around like a coupon for free government money. A box of condoms or a $300 to $500 abortion is a damned sight more economical to society and our government than 18 years of counseling, welfare, food stamps, subsidized housing, legal assistance, foster care, Medicaid or independent living expenses if the kids age out of foster care.

Rec: Shrimp Jambalaya
1 pound boneless, skinless chicken thighs, cut into 2-inch pieces
2 stalks celery, thinly sliced
1 medium green bell pepper, cut into 1 inch pieces
1 medium onion, chopped
2 cloves garlic, minced
1 (28 oz) can crushed tomatoes, with liquid
1 tablespoon white sugar
1/2 teaspoon salt
1/2 teaspoon dried Italian seasoning
1/2 teaspoon cayenne pepper
1 bay leaf
1 cup uncooked orzo pasta
1 1/2 pounds cooked shrimp, peeled and deveined
In a crock pot, mix chicken, celery, green bell pepper,
onion, garlic, tomatoes with liquid, sugar, salt, Italian
seasoning, cayenne pepper, and bay leaf. Cover, and
cook on LOW 7 to 9 hours. Remove bay leaf from the
chicken mixture, and stir in orzo. Increase heat to HIGH.
Cook 15 minutes, until orzo is tender. Stir in shrimp, and
cook 2 minutes, until shrimp are heated through.
Serves 6 to 8
Refrigerate remainder
Can be reheated in microwave

Rec: Crock Pot Vegetarian Goulash
8 ozs mushroom, sliced
5 1/3 ozs tempeh, in 3/4 inch dice
2/3 cup carrot, in 1/2 inch dice
1 1/3 medium onion, chopped
2/3 large tomato, peeled, seeded & chopped
2/3 small bell pepper, chopped
1 1/3 garlic clove, minced
7/8 cup vegetable broth
4 teaspoons paprika
2 teaspoons dried parsley
1 1/3 teaspoons dill
1/3 teaspoon caraway seed, lightly crushed
1/3 teaspoon salt
1/4 teaspoon pepper
2/3 (10 1/2 ozs) package silken tofu
2/3 cup frozen peas, thawed
Put the mushrooms, tempeh and carrots into a crock pot
(no need to steam the tempeh first). Combine onions,
tomato, bell pepper, garlic and broth in a blender container
and puree. Add the puree to the crock pot and mix well.
Add the paprika, parsley, dill, caraway seed, salt and
pepper to the crock pot and stir well. Cover and cook on
LOW heat 8 to 10 hours. Shortly before serving, puree
the silken tofu in a blender with a little liquid from the
crock pot until very smooth. Stir it into the crock pot, add
the peas and heat through. Serve over cooked noodles,
potatoes, rice or other grains.
Serves 2 to 4

1/8 teaspoon salt
6 (6 inch) flour tortillas
3/4 cups shredded reduced-fat Mexican cheese blend
In a 1-1/2-qt. microwave-safe dish, combine the first
nine ingredients. Cover and cook on HIGH for 3 minutes
or until vegetables are tender. Divide vegetable mixture
evenly over 3 tortillas; sprinkle with cheese. Top each
with remaining tortilla. Place each filled tortilla on a
microwave-safe plate; cover with a piece of waxed paper.
Microwave on HIGH for 30 to 45 seconds or until cheese
is melted. Repeat with remaining quesadillas. Cut each
quesadilla into wedges.
Serves 2 to 3

2 2/3 cups fresh spinach, rinsed
1/3 cup parmesan cheese or asiago cheese, grated
1 1/3 (13 1/4 ozs) boxes no-boil lasagna noodles, uncooked
10 2/3 ozs mozzarella cheese, shredded
In large saucepan over medium heat, heat olive oil and add
onions and garlic. Cook over MEDIUM heat until tender,
about 3 minutes. Add mushrooms, oregano, salt and pepper
to taste and cook for another 3 minutes, stirring often. Add
tomato paste and stir mixing thoroughly. Add tomato sauce,
stir and cook sauce stirring occasionally for another 6 to 8
minutes or until heated through. Remove sauce from heat
and set aside. In crock pot, cover bottom with enough sauce
to just cover. Add two layers of lasagna noodles, breaking
them where needed. Spread noodles with one tub of the
ricotta cheese and salt and pepper. Add two layers of lasagna
noodles. Cover noodles with half of the sauce, sprinkle with
1/2 of the mozzarella cheese. Add two layers of lasagna
noodles. Spread noodles with 1/2 tub of the ricotta cheese.
Shake excess water from spinach leaves and cover cheese
with spinach and salt and pepper. Add two layers of lasagna
noodles. Cover noodles with remaining sauce and cover
sauce with remaining mozzarella and parmesan or asiago
cheese. Put lid on crock pot and turn on HIGH. Leave to
cook for 5 hours. When done, let lasagna sit for 8 minutes
to set before cutting.

meatless Spaghetti sauce, Ragu, Prego
Cheese, grated, low fat
Spray glass dish (8 x 12 x 2 inch or larger) with Pam.
Sprinkle a little water on the bottom of dish. Add diced
onion and microwave on HIGH for 3 minutes. Remove
onions from dish, leave liquid and layer in the following
order: Torn tortillas, onions, zucchini, celery, pickles, olives
and beans. Top with spaghetti sauce, any amount you wish,
cover with plastic wrap and microwave for 15 minutes on
MEDIUM. Remove from oven and let stand for 5 to 10
minutes with plastic wrap in place. Remove plastic and
sprinkle with grated cheese.

Rec: Crock Pot Hearty Vegetarian Hobo Soup
24 ozs frozen mixed vegetables
1/2 (46 oz) can V8 (low sodium if you like)
1 bay leaf
salt
garlic powder
1/2 (16 oz) package coleslaw mix
Spray a crock pot with cooking spray. In the crock pot,
mix together the Vegetables, Vegetable Juice, Bay Leaves,
Cole slaw, Garlic Powder and Salt to taste (I substitute 1
tablespoon ONLY of Ms. Dash Original Flavor for the garlic
and salt and sometimes add chopped onions to taste).
Cover and cook on LOW 8 to 10 hours.
Serves 2 to 4
Refrigerate remainder
Can be reheated in microwave

Spray a crock pot with cooking spray. In the crock pot,
mix together the Vegetables, Vegetable Juice, Bay Leaves,
Cole slaw, Garlic Powder and Salt to taste (I substitute 1
tablespoon ONLY of Ms. Dash Original Flavor for the garlic
and salt and sometimes add chopped onions to taste).
Cover and cook on LOW 8 to 10 hours.

1/4 cup chopped fresh chives
In a blender combine one tomato, half the cucumber,
half the onion, a green bell pepper quarter, the pimento
and 1/2 cup tomato juice. Blend at high speed for 30
seconds to puree the vegetables. In a large bowl mix
the pureed vegetables with remaining tomato juice,
1/4 cup olive oil, vinegar, hot pepper sauce, salt and
ground black pepper. Cover mixture and refrigerate
until it is well chilled (about 2 hours). Meanwhile saute
the croutons in oil and add the garlic; transfer to a
small bowl. Place remaining chopped tomato,
cucumber, onion and green bell pepper in separate
bowls. Serve soup in chilled bowls, garnish with
chives, and serve chopped vegetables and croutons
as accompaniments.

zucchini, yellow pepper and onion. Drizzle with oil; toss
to coat. Cover and microwave on HIGH for 3 minutes.
Stir in the remaining ingredients. Cover and cook on
HIGH for 9 to 11 minutes.

And I'd point out that the "Mexico City" policy that cut funding for abortion and contraception in Latin countries came from President Reagan, the ignorant bastard. And guess why we have then had a nearly 30-year glut of illegal immigrants flooding from South American countries that cannot support all these unplanned for, unprovided for children? I love how these men who sell themselves like prostitutes to lobbyists and religious organizations are so incredibly generous when it's not them that has to foot the bill or spend their lives taking care of children who have no hope of normalcy or availability of basic medical care.
Said it before, any woman who is forced to bear a child she did not want and could not support should be allowed to put her state representative's name on the birth certificate and sue their representative for child support. We'd see how fast these jerkweeds support contraception and abortion when it comes out of THEIR hides. I mean, the taxpayers aren't going to be out any money. We pay for the unwanted children anyway. I just think we should make it come out of the representative's taxpayer-based salary instead of him collecting a paycheck from us while we still have to pony up a lifetime of separate fees for the two-legged legacies of his moral stance.

1 cup sushi rice
1/4 cup seasoned rice vinegar

1/2 Avocado, thinly sliced

3/4 cup flaked imitation crabmeat (surimi) or 3/4 cup thinly sliced smoked salmon
1/2 cup very thinly sliced English cucumber
2 tablespoons pickled ginger
2 tablespoons light mayonnaise
2 tablespoons milk
1 tablespoon wasabi powder
In saucepan, combine rice and 1 1/4 cups (300 mL) water; bring to boil.
Cover and reduce heat to low; cook for 25 minutes or until rice is tender.
With fork, stir in rice vinegar and sesame seeds. Meanwhile, line 8-inch

Rec: Cabbage And Leeks In Cream Sauce
1/2 head cabbage, coarsely chopped
3 large leeks, sliced
1 large garlic clove, minced
2 tablespoons sherry or dry white wine
2 tablespoons water
3 tablespoons butter
2 tablespoons flour
3/4 to 1 cup half and half or milk
1/4 teaspoon mace, or nutmeg
salt and pepper, to taste
Put cabbage and leeks in crockpot. Add minced garlic,
sherry and water (or use 1/4 cup of chicken broth).
Dot with 1 tablespoon of butter; cover and cook on LOW
for 7 to 9 hours. Melt butter in saucepan; add flour and
stir until smooth and bubbling. Add cream or milk and
cook over LOW heat until thickened. Add the mace and
salt and pepper to taste. Mix into the cabbage and leek
mixture.
Serves 2 to 4

quarters. Add all the diced and sliced veggies to the
crock pot. Cover and cook on LOW 4 to 6 hours or until
vegetables are tender. Meanwhile, cook spaghetti
according to package directions; drain. Serve sauce on
top of cooked spaghetti with mozzarella sprinkled on top.

Rec: Microwave Donburi Chicken, Egg & Oyako Sauce
4 cups warm steamed rice
1 lb. chicken breast, skinless, boneless and cut into 2-inch strips
2 cups onion, sliced in 1/2 inch chunks
1 1/2 cups carrots, cut in half moon shapes
1 cup mushroom, sliced in half
2 cups watercress sprigs, cut 1 inch long
4 eggs, beaten
Sauce
1/4 cup soy sauce
1/4 cup sugar
1 tablespoon white wine
Mix theingredients in a 3-quart casserole, and stir
until the sugar dissolves. Add the onion, carrots, and
mushrooms and place the chicken slices on top. Spoon
the Oyako Sauce over the vegetables and chicken.
Cover with a vented microwave lid. Cook on HIGH
(1200W) for 9 to 10 minutes. When the chicken is
cooked, pour the beaten eggs over the top and cover.
Cook on HIGH (1200W) for another 2 to 3 minutes or
until the eggs are done. Take the casserole out and
add the watercress. In serving bowls, spoon in the rice
and spoon the Oyako mix on top.
Serves 4

Rec: Frankie's Potato Knish, The Easy Way
Buy one box of the packaged potato pancake mix (that’s LATKE
not KUGEL) in the international food section and the puff-pastry
sheets from the frozen dessert section – both are available
at Publix.
Follow the directions on the puff pastry box and the potato
pancake mix.
There are two sheets of the puff pastry. You can cut the two
sheets in half so that you now have four pieces. Let thaw
while you prepare the potato pancake mix.
Follow the directions on the box to prepare the potato pancake
mix. Then, after it’s mixed, pour it into a large glass baking
container and nuke it at HIGH for 10 minutes, or until the center
holds a toothpick upright. You don’t want to dry out the mix
or burn it, but you do want it done, so you might have to stop
the microwave and stir the mix again before resuming the
nuking to make sure it’s all cooked.
Now that you’re happy that it’s cooked through, it should still be
pliable and crumbly. Put it in four equal measures on the four
pieces of puff pastry sheet. Smoosh it into a rectangular form
on the sheet. I usually make sure it’s toward one side so I can
just fold the other half of the sheet over and have it fairly
evenly distributed but still covered by the pastry. Or you can
put the potato mix in the middle of the sheet and pull up the
four corners and make it look pretty. I prefer the simple
fold-over and pinch the edges together on the open three
sides of the little “bed” of pastry like I do. The theory is,
you don’t want to bite pastry without getting some potato
in it.
Put it in the conventional oven on a cookie sheet and bake at
400 degrees or until the shell is golden brown. Take it out
and let it cool.
Good eating.

Just a couple of squash, zucchini, eggplant and a package
(or can) of mushrooms, some cheese and one onion, all of
which costs less than $5, and you can make the neatest
and tastiest veggie sandwiches.
Long slice the zucchini, yellow squash, mushrooms, onions
(I like red), eggplant or cabbage (be creative in your slicing)
and sauté the sliced veggies and mushrooms in olive oil, a
teaspoon of soy sauce, sprinkling of garlic powder, basil. When
everything is nice and limp, lay it out in layers on a toasted
hoagie roll or bun or whatever. Add shredded Parmesan or
the powdered kind (I like shredded, it melts so nice and oozily).
Devour at will. If you make more than can be put in one
sandwich, put the already cooked stuff in storage bag or bowl
and you can reheat for later sandwiches. Tomato, fried or plain,
also adds zest.
Eggplant is also great if sautéed in margarine until limp, cover
with shredded Parmesan and Mozzarella cheese and then pour
a can of Beefaroni (or the Wal-Mart generic Macaroni and Beef)
over it. Mmm-mmm. I call that the poor man’s Eggplant
Parmesan. And the Beefaroni is way low in fat. So try that too.

take out as many potatoes as you like and dice. Add about 2
tablespoons of cooking oil in a skillet, put in the onions and
potatoes, spread around in the oil. Place thin slices of corned
beef straight from the can on top of the veggies as they cook.
Not the whole can – just enough to cover the potatoes in the
pan. Put the excess in the sealed container with your unused
potatoes for later.
Over MEDIUM heat, stir occasionally until potatoes are
browned. Remove from heat and serve. You shouldn't need
much salt, the canned corn beef has plenty. You can throw in
some garlic powder or other seasonings, but frankly the
onion and touch of salt and pepper are all that’s needed.

The Hard Truth From Orlando
THE LOUISIANA COREY FRAME-UP
It's sad. It's bad. But it's Louisiana (or Texas -- and sometimes Florida) -- or Ferguson, Missouri. The corruption and politically driven need for convictions to further careers in law enforcement and the criminal justice system are pretty obvious. It's embarrassing for those of us who work the system when this kind of obscenity is uncovered, and more of an embarrassment when there doesn't seem to be a quick and resolute correction of the malefaction.
But it's not merely a one-sided, race-driven institution that condemned Corey. It's that gaping Grand Canyon of the cultural divide. Where were Corey's parents in all this? Where was the adult supervision on the night of the pizza robbery? If the boy is that disabled, the crime occurred at night, where were his parents and the parental supervision for he and his underage brother and why were they hanging out with adult men who were probably well-known in the neighborhood for criminal activities? Why didn't the parents or the Defense take the non-compliance of the prosecutor and discovery violations to the media, if not to the Louisiana Bar Association? Because it's easier to blame the "white" system than to make it work for you.
I see this kind of potentially disastrous scenario every single day in Orlando. It happens in West Cocoa, Titusville -- anywhere you have the black population, and a fairly significant portion of our Hispanic population. It's the cultural norm to float around at all hours, unsupervised. It's the NORM to have a criminal record, and therefore you don't restrict your children from running with other people with criminal records or hanging in neighborhoods with a bad reputation. You condone criminal records because "it's the white people's fault" and most of your neighbors and family members have a record, so what's the big deal?
I don't doubt for a red-hot instant that blacks are stopped more often, arrested more often, charged more often, imprisoned more often. But isn't it equally true that so much of the crime is occurring or originating in predominantly black neighborhoods? Yes. I know that's how it is. But what has the black community done about changing this? They don't make their kids be HOME when it's dark. Hell, the parents aren't home after dark. They don't curtail who they hang with, family or not -- bad guys are bad guys. They don't enforce school and good behavior in school and studying (which you can't do anyway if you're not home until late and hanging around in the 'hood).
This morning at 5:10 a.m., walking the dog around the park, a younger black man on a bicycle came across the parkway, saw me, veered off and cut through the park on an expensive racing bicycle without headlights or tail-lights (which WILL get you stopped by the police in Orlando as it's a traffic infraction). He was wearing all dark clothes, had an expensive black backpack and, weirdly, black saddlebags on the bike. I turned the corner of the park and it wasn't three minutes when there was a loud metallic clang down Robinson and a business's alarm system went off. Three guesses which direction and where he'd have been time-wise when that alarm went off? Yep.
The burglaries in my neighborhood are almost nightly. The shootings in Orlando/Orange County are pretty much nightly, too. And the demographics? Nearly all black, with Hispanics running a not-too-close second. And yet, if that young man this morning had been stopped for a bike without lights while pedaling rapidly away from the alarm, he'd have argued "profiling." If he'd been white, he wouldn't have had any excuse. That's the real double-standard.
Change the culture and you'll change the frequency of Corey-type horror stories.

Rec: Crockpot Black Bean Soup
1/2 pound dry black beans (can substitute canned)
3 cups water
1/2 carrot, chopped
1/2 stalk celery, chopped
1/2 large red onion, chopped
3 cloves garlic, crushed
1 green bell pepper, chopped
1 jalapeno pepper, seeded and minced
2 tablespoons dry lentils
1/2 (28 oz) can peeled and diced tomatoes
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1 tablespoon and 1 1/2 teaspoons red wine vinegar
1 1/2 teaspoons salt
1/4 cup uncooked white rice
Skip this if using canned: In a large pot over
MEDIUM-HIGH heat, place the beans in three
times their volume of water. Bring to a boil, and let
boil 10 minutes. Cover, remove from heat and let
stand 1 hour. Drain, and rinse. In a crockpot,
combine soaked beans and 3/4 quarts fresh water.
Cover, and cook for 3 hours on HIGH (1 hour if using canned).
Stir in carrot, celery, onion, garlic, bell pepper, jalapeno pepper,
lentils, and tomatoes. Season with chili powder,
cumin, oregano, black pepper, red wine vinegar, and
salt. Cook on LOW for 2 to 3 hours. Stir the rice into
the crockpot in the last 20 minutes of cooking. Puree
about half of the soup with a blender or food
processor (if you like a chunkey soup, skip) , then pour
back into the pot before serving.
Serves 3 to 5
Refrigerate remainder
Can be reheated in microwave

1/8 teaspoon pepper
4 slices favorite cheese, thin slices (optional)
bacon or chives (to garnish)

potatoes with a fork into large pieces. This does help thicken

1 lb fresh green asparagus
4 tablespoons unsalted butter
1 onion, finely chopped (I use Vidalia sweet)
5 tablespoons all-purpose flour
4 cups chicken broth
1 tablespoon chives
1/2 cup heavy cream
1 tablespoon lemon juice
1/2 teaspoon paprika
salt, to taste
pepper, to taste
Cut off the tough bottom ends of the asparagus and discard.
Cut off the tips of the asparagus and set into a bowl; set aside
a few of them for garnishing later. Chop the stalks of the
asparagus into small, bite sized pieces and add to the bowl
of asparagus tips. Place butter in a heavy, deep round
microwaveable dish (such as a white Corningware casserole)
and let it melt on HIGH for approximately 1 minute, or until
melted. Add the onion and aspargus tips& spears to the
butter, cover, and cook on HIGH for about 4-5 minutes.
Stir in the flour, mixing well. Next, pour in the broth and
add the chives, stir, recover, and cook on HIGH for 10
minutes, stirring 3 times during this process. Asparagus
should be very tender- if not, return for 2 more minutes,
stir, test again, repeat if needed. Remove from microwave
(wear oven mits) and puree using a wand blender (or use
your regular blender). Add cream, lemon juice, and
seasonings to taste. Get the asparagus tips you set aside
for the garnish and put them into the microwave, in a
microwave safe dish, for just about 2 minutes or so-
just enough to blanch them so they aren't so raw tasting.
Ladle soup into individual bowls and garnish with an
asparagus tip before serving. NOTE: Since microwaves
vary greatly, there may be some variations in the cooking
times depending upon your microwave.
