Rec: Chicken And Okra Gumbo

1/2 chicken (about 1 lb)
1 onion, chopped
2 stalks celery, chopped
1/2 bell pepper, chopped
1 clove garlic, minced
1/2 (15-ounce) can diced tomatoes
1 sprigs thyme
1 bay leaf
2 cups chopped fresh okra
salt and freshly ground black pepper to taste
hot sauce to taste


In a large pot over medium-high heat, add the chicken
and cover with water. Add the onions, celery, bell pepper,
and garlic and simmer for 15 minutes. Remove the
chicken from the pot and allow it to cool. When the
chicken is cool enough to handle, remove the skin and
bones. Shred the meat and set aside. Add the tomatoes,
thyme, bay leaf, and okra to the broth in the pot.
Simmer for 5 minutes. Add the shredded chicken to the
pot. Season with salt, pepper, and a dash of hot sauce.
Just before serving, remove the bay leaf.


Serves 2 to 4
Refrigerate remainder
Can be reheated in microwave

I'm not a big okra fan but you need it for gumbo.
